Crafted exclusively in the finest vintages, the Ripasso “Il Fornetto” undergoes the traditional “ripassaggio” technique, where it is passed over the Amarone grape skins. During this process of refermentation, unique and unmistakable aromas are released from the grape skins.
Its color is an intense ruby red. On the nose, it surprises with evolved notes reminiscent of dried fruits and black pepper. Upon tasting, it immediately reveals its power, which is then smoothed by the sweetness and softness of matured tannins. Lastly, its acidic vein makes it exceptionally persistent on the palate.
It pairs perfectly with grilled or boiled white and red meats, roasts, and aged cheeses.

Ripasso della Valpolicella
Valpolicella Ripasso is a red wine made through a unique technique: fermenting Valpolicella red wine a second time over the sweet grape skins of Amarone and Recioto. This traditional method enriches the wine’s body, colour, bouquet, and alcohol content — resulting in a fuller, more complex expression.
The term Ripasso means “re-pass” or “go over again,” and the process became so renowned that it earned its own DOC status in 2007.
Ripasso wines typically show an intense ruby-red colour and a rich, aromatic bouquet. On the nose, expect notes of spice, dried fruit, cherry, and hints of vanilla. On the palate, the wine is warm and full-bodied, with a smooth texture and a well-balanced structure. Fruity notes blend beautifully with a subtle touch of bitterness.
Thanks to its robust yet versatile nature, Ripasso pairs exceptionally well with food. It complements roasted and grilled meats, hearty stews, aged cheeses, and richly flavoured pasta dishes.
Stefano Accordini
The Stefano Accordini winery is a true family affair. Led by Stefano, supported by his wife Giuseppina and their sons Tiziano and Daniele, the estate covers just 4 hectares in Negrar, the heart of Valpolicella Classica. Though not a large winery, it’s equipped with cutting-edge technology — and even more importantly, with a century of experience.
The family grows native grapes like Corvina, Corvinone, and Rondinella on high-altitude vineyards where limestone-rich, skeletal soils produce low yields but exceptional quality. These conditions naturally encourage the development of intense aromas, especially the spicy notes that make Valpolicella wines so distinctive.

Today, the fourth generation (Giacomo, Paolo, and Marco) continues the work with the same passion and growing awareness of sustainability.
