The winery San Silvestro is located in Novello, in the heart of Barolo district, Piedmont. Here, Paolo and Guido Sartirano run the businness with wisdom and respect for the tradition and for the history of this company. They represent the fourth generation and want to be respectful towards the work their family did to be where they are today. Gavi Cortese
Cortese is a white grape variety most famously associated with the crisp, lime-scented wines of Gavi.
It has long been considered as Piedmont’s finest white variety and is often credited as introducing the world to Italian white wine. Nowadays, however, it has been challenged for top billing by Arneis and Moscato d’Asti.
Cortese must be watched carefully, ripeness is the key issue; while it does well in Gavi’s warm environs, it can struggle to ripen fully in other parts of Piedmont.
