The nose on this 100% Organic Pecorino evokes floral and yellow fruit aromas, fresh and even exotic. Delicately herbal with sage-filled notes, the body is powerful, with extraordinary flavors and surprisingly fresh. Notes of apricots, honeysuckle, and sea-breeze on the nose; with a round, dense body and a long, orange-lotus finish.

Le Vigne di Clementina Fabi has its origin in the little area of Montedinove (AP), in the Marche region, central Italy, at the end of the 19th century, when the Fabi family buys here some land. Valorizing the historical and native varieties, like Pecorino and Passerina, has been, for the Fabi family, a deeply felt duty and an act of respect towards the vine-growing area of Montedinove. Their philosophy is a simple one: respect for nature. All their production is certified Organic and the use of any type of chemical is banned.

Pecorino

The name unfortunately has nothing to do with the famous cheese, which is coincidentally, a surprisingly good food match for Pecorino wine, but more likely refers to sheepherders who ate the grapes while accompanying their flocks up and down the valleys. By the mid-20th Century, Pecorino was thought extinct until the early 1980s when a local producer found an old vineyard with his vines and took some cuttings. The grape itself has an exceptionally high sugar content and tends to reflect the terroir without reserve — it’s both sensitive and expressive, it’s a grape for a patient, dedicated winemaker; that can be approachably youthful or age-worthy and complex. The best examples of Pecorino are from the Marche region in central Italy, and specifically those of the DOCG Offida.
