Cherry Fortified Wine La Fenice, Why We Love It and Why You'll Love it Too
At a recent event in London, in collaboration with I Love Italian Food, we hosted a tasting that focused on sweet wines. During the event, we discussed the best times to enjoy these wines, ideal pairings, and the common misconceptions surrounding them. Among the wines we tasted were a Moscato (which, to be honest, I can’t quite remember by name) and, of course, our star wine: Cherry Fortified Wine La Fenice.
Finding a truly exceptional dessert wine can be difficult. It’s one that makes you pause and really savour the moment. After taking a first sniff and sip of La Fenice, there was no question—everyone agreed on the winner. It’s amazing how a good sweet wine can change your whole perspective on the category. Many people overlook sweet wines, but once they try one that stands out, everything changes. The room fell silent as everyone experienced its unique balance, elegance, and depth of flavour.

How La Fenice is Made
STEP 1: The sour cherries macerate in red wine inside stainless steel containers for around 30 days.
STEP 2: The wine is filtered using a pump and a cardboard filter. The sour cherries are pressed using a wine press, and the juice extracted is filtered. The wine and juice are blended together and filtered again.
STEP 3: Sugar, 95% ethanol, and white almond essence are added. The mixture rests in stainless steel for about 10 days.
STEP 4: The finished product is bottled using a stainless steel filler. Once bottled, La Fenice is ready for distribution.
